Who are Kin Coffee Roasters?

Kin Coffee was founded in 2019 by partners Greg and Kate.

Their story began in West London, where they resided for several years. However, when the coronavirus pandemic struck, they chose to seek refuge in the tranquility of the Kentish countryside.

What they found themselves missing the most after relocating was the joy of waking up on a sunny morning, riding the Ducati, and indulging in a flat white from the diverse selection of exquisite boutique coffee houses they had enjoyed while exploring the city.

They were experiencing serious withdrawal from their high-quality caffeine fix!

The solution initially presented itself with the acquisition of a splendid VBM espresso machine and Ceado grinder.

Despite mastering the perfect grind size and learning the art of latte, they couldn't quite replicate the bold flavors they had savored in their favorite cafés.

The problem, as it turned out, was the freshness of the coffee. Once they began ordering from websites that offered "freshly roasted coffee delivered to your door," their taste buds were once again satisfied.

They then immersed themselves in the nuanced world of coffee.

They explored where the beans are harvested—the raw coffee "beans" are actually a light green seed from the cherry-like fruit of the Coffea plant—how the fruit is processed, the bean extracted (which greatly affects the taste in the cup), how it is traded and exported, and finally, how it is roasted, ground, and brewed.

One sunny day, the quaint but slightly forlorn "potting shed" in their garden seemed to be calling out for use. They decided that refurbishing the building would be an excellent lockdown project, but the space would also be perfect for trying their hand at roasting coffee themselves. So, they ordered a commercial roaster!

They have been directly trading with a single farm in Brazil since their inception for their mainstay coffee and have a diverse range of solely naturally-processed options supplied by Falcon in Lewes, East Sussex. All roasted with a view to develop the natural innate flavour profiles present in the beans and swaying away from the dark side of bitter espresso roasts

The Origin

The Cooperativa de Caficultores de Alto Occidente de Caldas which was established in 1964. The San Lorenzo indigenous group are based in the Rio Sucio municipality of Caldas where there are 11,500 inhabitants with 1,150 farmers growing and producing coffee within the 21 communities. This region until recently was heavily inhabited by the FARC, ELN, Paramilitary groups and guerrillas who looked to control this central corridor in Colombia. This region has not been known for specialty production but as the tensions ease and access has improved it is now possible to demonstrate the quality of the coffees available.

The indigenous inhabitants believe in the Pacha Mama where they see the land as a living being.

To them it is their duty to protect the natural environment and have as little impact as possible from their farming of coffee and to leave it as it has always been. Each farmer has approximately 0.5 Ha of land in which they have about 2500 coffee trees.

During the harvest the families will work with their neighbours to select ripe cherry before de-pulping in micro-beneficios where they will then de-pulp and ferment the coffee in water for 16 -24 hours depending on the weather. The coffee is then washed and then put out to dry on small drying patios on the roofs of the houses where they will dry it for between 8 – 14 days depending on the weather.
