About Baristocracy Coffee Roasters Review

Alex grew up in Sydney, learning to roast and brew from his parents, whose café Forsyth Coffee and Tea is still running on the North Shore today. The business launched in 2017 with three things at its core: exceptional, flavourful specialty coffee; fairly paid farmers with full supply chain transparency; and a genuine commitment to sustainability and reducing environmental impact. Baristocracy sources coffees from smallholder farmers, marginalised communities and lesser known producing countries, working with importers who build lasting relationships at origin. Those relationships matter because they give producers the confidence and security to experiment with new processing methods and varietals without the financial risk of not knowing whether the end product will sell. Based in the UK, Baristocracy sees itself as a bridge between the people growing the coffee and the people drinking it at home.

Coffee Origin

The Burundi coffee from Baristocracy Coffee Roasters originates from the Sabanilla de Alajuela region of Costa Rica.

Las Lajas Micromill is run by Oscar and Francisca Chacón, third generation coffee producers from Costa Rica whose commitment to quality goes well beyond family tradition. In 2005, tired of delivering cherry to a cooperative at market price with no control over quality, the couple bought their own depulper and joined what was then a brand new micromill movement in the country.

What followed was years of hands on experimentation that helped put Costa Rica on the specialty coffee map. The Chacóns are among the first farmers in the country to produce both Honey and Natural process specialty coffee, developing a wide range of Honey process lots by carefully modulating drying times to create different flavour profiles in the cup. Some of their most exciting work came out of necessity. When an earthquake in 2008 knocked out electricity and water during harvest, Francisca drew on her knowledge of African coffee production, quickly built raised drying beds on the property and produced their first Natural lots. Those coffees caught the attention of Cafe Imports founder Andrew Miller, and Las Lajas has been celebrated on the world stage ever since.
