Kickback Coffee Roasters

Kickback Coffee Roasting co.

Kickback coffee is a Cheshire based coffee roaster.

They showcase some of the finest sustainable coffees out there.

Kickback began when founder Alex started roasting coffee for his friends and family.

After receiving a great reception he decided to turn his coffee roasting hobby into a business.

That was 2017. Since then Kickback have been putting out a new single origin roast each month, sampling some incredible coffee beans and meeting some amazing people along the way.

The guys at Kickback are now full steam ahead. After chatting to Josh Williams (Barista Champion and Filtered Thoughts) who has recently joined the team it’s clear that these guys are now looking at competing with some of the big boys in the speciality coffee roasting scene.

The Origin

The Chirinos from Kickback Coffee Roasters Originates from the Cajamarca region of Peru.

Chirinos is a co-operative of smallholder coffee farmers in Cajamarca, North Peru.

In 1968, 36 smallholder farmers joined together to form this co-operative and today they boast over 807 members, 30% women, from several communities in Cajamarca region.

This lot is a blend of coffees from various smallholder producers across this region.

The average farm size amongst these producers is 1.5 hectares, with the main varieties grown being Caturra, Catimor and Bourbon.

Most of these producers dry their coffee on plastic mats on the ground, much like patio drying.

Coffees were purposefully selected and blended together based on tasting notes typical of the region.

All component lots come from high altitude areas and the early harvest, processed and dried by the producers on their farms.

Most smallholder farmers in northern Peru have their own hand pulpers and fermentation tanks to process coffee before patio or raised bed drying. Once processed, the parchment coffee is delivered to the Jaen warehouse where it is graded, moisture tested, roasted and cupped.

The Origin

The Puebla from Kickback Coffee Roasters Originates from the Puebla region of Mexico.

Mexican coffee is fairly unusual on this side of the Atlantic with the majority of the coffee heading North to the USA.

It also doesn’t produce a great deal of speciality grade coffee with most of the coffee leaving the country sold as commodity coffee.

This however may change in years to come as Mexico has a huge amount of land that is perfect for growing high-grade speciality coffee as well as a large workforce of well-established coffee-growing professionals..

With fairly high traceability, Mexican coffee can have a broad range of flavours.

That said, a typical Mexican coffee is delicate and light in body.

It doesn’t usually possess the bold fruit notes compared to those of its Southern neighbours but instead can have a sweeter, chocolate flavour profile.
