Liberty coffee co are situated in Wood Green - North London. They are a family run business that focuses on roasting high-quality seasonal coffee.
The Serenity coffee that I received from Liberty is a blend of coffee from the Americas. Huehuetenango in Guatemala, Colombian Timana and Brazilian Pocos De Caldas. This certainly is a blend of high-scoring speciality coffees that you don’t always see in speciality coffee roasters. Blends are often used to create a coffee that has a consistent and mid-range flavour profile, often used in espresso machines they require body and darker flavours to perform well when mixed with milk.
The Fragrance of the Serenity coffee was not what I expected from a blend - Sharper more acidic notes rushed out of the bag layered with caramelized fruit and brown sugar.
The coffee begins with that acidity forward, but is brisk and makes way for sweeter notes of brown sugar and poached pear that combine together in a wonderful way, building and completely taking over the flavour profile of the coffee.
The coffee smoothes out after a while and the acidity takes a back seat while the various notes of pear, brown sugar and milk chocolate vie for your attention.
A fantastic well-balanced coffee that has attributes of both a single-origin coffee and a blend. The body makes it suitable to chuck a bit of milk over the top while the subtle acidity at the start quenches the adventurous thirst of those who opt for pour-overs.
As always brewed in a variety of methods. The Serenity for me performed best as an Aeropress - the clean yet full-bodied cup that an Aeropress produces made it a perfect match for this coffee.
