Two Chimps Coffee
Two Chimps Coffee are a speciality coffee roastery based out of Rutland in Oakham, UK
The name is a testament to their laid back and fun-loving nature they have with their work. Two chimps’ mission is to fill the gap between pod machine coffee drinkers and speciality coffee drinkers by offering fresh, hand-roasted speciality coffee straight to your door.
They pay between 30 and 150% more than the ‘going rate’ for their green beans to make sure the farmers who lovingly grow and harvest such superior products are paid correctly for their work and efforts.
At any given time they have six single origin coffees available. To add to this lineup, they also have a limited edition blend. Each of their coffees has been roasted with a particular brewing device in mind. For example, three of their coffees have been crafted for a cafetiere or filter device, and the other three have been crafted for an Aeropress, Moka pot or espresso machine.
The Sitio Banderia Branca coffee from Two Chimps is a medium roasted Brazilian natural. The name is also the farm that the coffee was grown which is located in the Ilicnea region of the country. It is a yellow bourbon and grown and produced at 1800m.
Brazil is such an interesting country for producing coffee. While obviously by far the largest coffee producing country in the world the speciality coffees from Brazil don’t always have a great reputation for complex stand-alone coffees. They are more likely found adding depth and richness to espresso blends or sold on the commodity market. There is a small percentage though, that are fantastic and a small percentage of a gigantic amount of coffee produced by the country actually turns out to be quite a lot. One of my most memorable coffee’s was a Brazilian natural that I found in a hip cafe in Sydney.
The Sitio Banderia Branca coffee begins with a more mild fragrance to that of many natural coffees, the grounds were sweet-toned while also hinting at a subtle acidity.
The cup starts with a satisfying sweet flavour that becomes more pronounced throughout the sip. It has a rich milk chocolate and honey flavour that lingers around right through to the finish. As the cup cools the complexity unveils as citric notes dance out of the brew alongside a cherry or two. The sweeter notes marry nicely with the interesting acidity and create a unique taste profile synonymous with naturally processed coffees.
A coffee that possesses a pleasant depth and body while also showcasing a couple of its natural talents.
Great as a pour-over and as an Aeropress. I actually cupped this alongside a couple of other coffees that I had and found that in comparison to washed or roastier flavoured coffees the flavours really jumped out.
